I have decided to take a vegan diet for a while. I was a vegetarian for nine years (ages 11-20) and had no problem giving up the meat. I have recently been watching A LOT of documentaries on netflix (darn you netflix) about food, nutrition and heath and I think I am making a good decision. That being said, it is hard! I love milk and cheese. Like a lot. A whooooole lot. So it has been a challenge. But anyway…here is one of my most favorite meals. The peanut sauce is a total winner (my husband likes any meal I make with peanut sauce) and it is sooo easy!
The first thing you do is saute a pack of broccoli slaw from the store. Just toss it in a pan with a tiny bit of water and a lid. Stir it occasionally until it is softened and then put it in a bowl. Once you have it cooled off enough to handle, open your package of won ton wrappers. they are usually in the produce department by the salad bags and mushrooms! Lay out a wrapper, put some veggies in it and fold it in half. I used to use egg to seal them, but now I just use water and it works just as well! lay them out on a sheet sprayed with non stick spray and bake them for about 12 minutes at 425 degrees!
While my won tons were baking i cut up some tofu and pressed all the water out of it using a dish towel. Then I tossed them in my pan with a little bit of oil and soy sauce just to give them some flavor and toughen them up before I added the veggies. Cook them until they are browned.
Then comes the fun part! Add in all your chopped veggies!! I use snap peas, broccoli, red peppers, mushrooms, onions and carrots. It is part of my eat the rainbow campaign! Add a little water (1/4 -1/2 cup) and a lid and just stir them occasionally.
While all that is going I get my peanut sauce going. It is the best part of this meal and I swear my hubby would eat cardboard if i put peanut sauce on it! 🙂 It is super easy and forgiving! I am not an exact measurement kind of girl so you’ll have to bear with me!
Peanut Sauce
- 3/4 cup peanut butter
- 1 spoonful of soy sauce
- 1 spoonful of minced garlic
- a big suirt of lemon or lime juice
- 1 spoonful of brown sugar
- 1/2 cup water
I add in sriracha because i like a little kick, but it is good without it as well. Just stir these in a pot on the stove on low heat, you don’t actually want them to bubble too much, just slowly melt into each other. Once it is thickened it is done! You can use it on top of your stir fry or mixed in. Usually I put it on top, but this time I mixed it in, because I was trying to hide the tofu from my hubby! I also cooked up a package of those pasta sides noodles we had in the pantry (sweet and spicy thai noodles) because i knew my kids would love them, and i wanted them out of my house!
Lots of components to this meal, but it is super good!
