So do you ever open the fridge, freezer and cupboard to make dinner and realize you have most of the ingredients for several meals but not everything you need to complete one. That is where this meal was born. I had evening I needed for burritos/taco salad/Mexican pizza but no tortillas or chips. I did however have top ramen and that got my wheels turning! I figured that at worst no one would eat it (2 nights a week that happens no matter what I make) and at best it would be a hit. I am so happy to say it was a total hit! Everyone licked their bowls clean and thew were no leftovers!
Mexican Ramen Noodle Salad
- 2 packets any flavor ramen noodles (you don’t use the flavor packet)
- I pound of ground meat or a bag of veggie crumbles
- 1 can of your favorite beans, rinsed
- A head of lettuce chopped up into bite sized pieces
- Taco seasoning
- Salsa
Start by putting water on to boil and getting you noodles ready. For me this just meant opening the package and taking the flavor packet out. Once the water boils toss your noodles in and turn on another big pan on the stove. Either brown your meat or heat up your veggie crumbles and add the beans and seasoning. Stir it up until everything is coated in flavor and cooked through.
Remove your pan from the heat and add your cooked, drained noodles. Also add a couple of BIG spoonfuls of your salsa. Site it all together until it is thoroughly mixed. Add the lettuce and give it a quick mix and then dish it up into bowls. Add your favorite garnishes and eat up!
