I have a deep love of Taco Bell. Maybe a little too deep sometimes, however they are slowly becoming the only fast food I will eat. I decided to try making a few of my favorite recipes at home and once I realized how easy it was I took it to the next level. This is a spin on the Crunch Wrap from Taco Bell. Only it’s better. Really though how can anything with coleslaw and shredded bbq pork not be amazing.
First things first I am going to let you in on a secret. This cheese melting tortilla trick is probably the best and most delicious thing I have ever come up with and it has revolutionized the burrito game at my house. Now bear with me because it’s gonna get crazy. You really need a non-stick pan for this trick, and not a normal pan that you spray with non-stick. You are going to heat your pan to a medium/high heat. Hot enough to melt cheese, but not so hot that is fries it to a crispity crunch. Once your pan is warm sprinkle the whole thing with cheese. Yep you heard me, put shredded cheese directly on the pan. Top that cheese with a tortilla and give it a minute to melt and get warm and soft.
While this is happening you can put your hand on top of the tortilla and swirl it around the pan, you can also feel the melty cheesy goodness though the tortilla. It gets squishy. Once the cheese is melted, but not burnt you can either flip your entire pan over and dump your tortilla on the counter or you can peel it off and toss it on the counter yourself. You get the same result so whichever floats your boat.
Now that you have a warm and soft uber cheesy tortilla the sky is the limit. I do this method every single time I make burritos and wraps. The cheese acts like a glue and keeps the tortilla from unrolling or opening up spilling all the fillings out. It also gives you melty cheese in every bite. YUM!
For this crunch wrap though you are going to leave it open flat for now. You need to add about 1/4 cup of shredded and sauced pork. Top that with a scoop of coleslaw. Is your mouth watering yet? Mine is. Then you need to add a crunchy tostada shell. Now normally the totasda shells cone in a big bag and they are generously sized. The ones I used for this are smaller, and they came in a package on the shelf with all the other “ethnic” foods at my grocery store. Lay one of those bad boys on top of the coleslaw. Then you wrap. This is where all that melty cheesy goodness comes in super handy. Because the big tortilla will want to stick to the small tostada shell. Go all the way around wrapping a little at a time until the whole thing is a neat little package. A package of goodness and mouthwatering flavor.
Flip that bad boy over so that all the folds are on the bottom and put it in your still hot pan. Let it grill until the tortilla gets brown and just a tiny bit crispy. Flip it over and brown the other side. Then try to breathe in between bites as you devour this amazing slice of southern bbq/mexican fusion wrapped in a cheesy tortilla. It’s like a gift.
