So my hubby works for a local seafood company and so he is constantly bringing me home fresh (like was swimming in the ocean this morning) seafood. This seems like it would be a good thing (and it is), but for a girl that spent 9 years as a vegetarian I have no idea what to do with it all!
Of course this leads me to both pinterest and google (btw…i seriously love google, i joke about how without google i wouldn’t have made it through grad school…well maybe it’s not really a joke, but anyway) to search for recipes. He brought home a couple of salmon a couple of nights ago and so I knew that I should do something fun with it. After much searching i decided that a mix of these two recipes (here and here) was necessary!
I am a visual person (which is ironic because most of the pics i take for this here blog suck!) and the picture of the broiled salmon was too good to pass up! But I don’t really like fish by itself…so the thought of wrapping it in puff pastry sounded good to me (i mean who doesn’t like puff pastry?!?!)
So I figured I was golden! Until I opened my fridge and saw that I was out of dijon mustard…so i was like what the hey, i’ll just use honey mustard, but i was out of that too. So i was left with spicy hot mustard and yellow mustard, neither of which seemed like a good idea…so i improvised! I used this really yummy bbq sauce and marinade in one, and that was a good idea! I basically laid my salmon steaks on a rack on a pan and brushed the sauce on. broiled them on low (because i didn’t want to burn them!) for like 8 minutes.
So I will tell you now that a recipe is merely a suggestion to me…a place for me to get ideas. i rarely follow them exactly and sometimes that works out and sometimes it doesn’t. So while my fish was broiling i sauteed some onions and peppers and cut my puff pastry into four pieces (like the recipe called for).
now I am not sure what size steaks they were using, but i knew that mine were not going to wrap up all nice and pretty in 1/4 of a puff pastry sheet, so I busted out my rolling pin and stretched them out. Once the veggies were sauteed and the fish was broiled I layered them on the pastry sheets and folded them up like a burrito. into the oven they went for like i don’t know 20-30 minutes.
Now learning experience #1) something leaked while cooking,which made my pastry get all soggy #2) soggy puff pastry does not look good. So I flipped them over and spread them out onto a bigger cookie sheet. This helped, marginally. Moral of the story…be careful what you stuff in puff pastry!
So, no good after pics…no amazingly staged beautiful image of a golden pastry with luscious salmon peeking out. however, you do get a real deal shot of the leftover bundle that my hubby will be taking for lunch tomorrow! 🙂 don’t judge it by the picture, it was delish!!!
