We love pizza at my house, but especially a super thin crust pizza. There aren’t a lot of choices at the store for thin crust so we make our own most of the time. I am also a super lover of bargain shopping. The best place I have found to get a great bargain at our grocery store is the clearance meat department. I know that sounds weird, but seriously we either freeze it or eat it immediately. For this dinner we used a bag of precooked grilled chicken that I got for literally $1.12. I mean you really can’t beat that for easy and affordable!
For this recipe i use the Jiffy brand pizza dough (it is the best in my opinion! I make it like the box says and then heavily flour my cutting board and roll it out. I probably use 3/4 cup of flour in the whole rolling out process! So I roll it into a squareish rectangle and then put it on my cookie sheet. Then I roll it out the rest of the way until it reaches all the corners! I find the crust doesn’t get soggy and turns out just the right amount of crispy if I pre-bake the crust for about 5 minutes before I add the toppings!
This pizza was a half and half one because I was trying to get rid of the leftovers in my fridge. So I smeared pesto on one side and bbq sauce on the other. Then I laid out the chicken on top of the bbq sauce along with some sliced red onions and shredded cheddar cheese. On top of the pesto I sprinkled some cooked ground elk meat and goat cheese (which I also got for 75% off in the deli section of our store!).
I baked them at 425 degrees for about 20 minutes or until the smelled done. So good! The bbq chicken was by far everyone’s favorite and I will be making it again (and again) in the future! What is your families favorite kind of pizza?
