So it is a constant struggle trying to come up with yummy and healthy food to make for dinner EVERY night! I had fallen into a rut of making the same couple of things or boring easy dinners (premade veggie burgers and roasted potatoes anyone?) and I knew that this was going to be the dinner to snap me out of it!
It is actually really easy, and involves mostly chopping lettuce and using a food processor (have I mentioned how much I love my $6 goodwill find!). Here is the worlds easiest recipe!
Mediterranean Salad
- Lettuce – your favorite kind (i used a whole heart of romaine)
- 1 can of black beans (rinsed and drained)
- two links of the sun-dried tomato tofurkey dogs (ground up in the food processor)
- 1/2 onion, diced
- handful of sunflower seeds for crunch factor!
- 4 tortillas
So basically you chop the lettuce and put it in a bowl. Grind up the dogs and rinse the beans and toss them in a pan with a little olive oil to get them caramelized. Toss a handful of sunflower seeds in the lettuce, zip 1/2 and onion through the food processor to get it diced and add it to the “meat” and beans mixture. Once your mixture is ready (maybe 10 minutes), throw it in the bowl and toss it all up. Now all you need is dressing! I cheated and used some greek vinaigrette I had already (waste not, want not).
I use the old fashioned way to warm my tortillas, on the burner! If you keep the heat really low and keep an eye on them they turn out amazing!!! I promise! Then you just wrap it all up and eat! Yummy, healthy and super easy! My kind of dinner!
