This is one of the easiest and fastest recipes ever, which is good because by the time dinner rolls around I am exhausted from making breakfast, lunch and 500 snacks that a big fancy meal is the last thing I want to do! I love using premade biscuits to help cut down on the prep time (see here)! It is totally versatile to do you could totally fancy these up and make them a little more grown up. This batch was floor my kids so we went with a traditional pepperoni. There are only four ingredients for this meal which means it is also super budget friendly.
Biscuit Pizza Cupcakes
- Grand reduced fat biscuits cut in half
- Red sauce
- Pepperoni
- Shredded cheese
Start by cutting your biscuits in half and then just hand stretch them into big circles. Take these circles and pop them in your greased muffin tin. Once your tin is full add a spoonful of red sauce into each biscuit cup.
Add a couple of pieces of your pepperoni into each cup. This is where you could also add veggies, other meats or any other of your favorite pizza toppings.
Top each cup with some shredded cheese and you are ready to bake them! I baked mine at 350* for about 20 minutes, but watch yours because oven temps and baking times can vary.
Once you pull them out let them cool and then you can just pop them out and serve them up!
