We got our first delivery from our CSA share (Community Supported Agriculture) last week and I was so excited! Fresh, local and organic produce delivered every week on the same day it is picked is divine. Figuring out a way to utilize all those yummy veggies was a little bit of a challenge (early summer veggies are not my go to veggies) but I figured what better way than to make a delicious and hearty salad. I think that somewhere along the way salads got a bad rap. They bring to mind watery iceberg lettuce, stale croutons and maybe a lone cherry tomato and carrot slice if you’re lucky. Not so much with this summer salad. With a variety of flavors, textures and ingredient combinations this Cobb salad is a far cry from those lame salads of the past!
To start this one off right I used a head of lettuce straight out of our CSA box. I chopped up some radishes, onion, carrots, cherry tomatoes, artichoke hearts, olives, hard boiled eggs, bacon, and avocado. I added a bag of precooked chicken that i picked up in the clearance meat department (that place is awesome) and sprinkled on some chives. I finished it off with some light blue cheese dressing and it was done! Such a yummy way to get all of your veggies in and help restore the salads reputation!
