I may have mentioned once or twice my love for easy dinners and this one fits that description beautifully! The hardest part about this meal is having to deal with crying eyes when you chop the onions. I love going to the taco truck and my favorite thing to order is a simple pork taco. Well seasoned meat, onion and cilantro wrapped in a soft corn tortilla. Add a squeeze of lime and a slice of radish and you are on your way to food heaven!
This dinner starts of with you pulling out either your crockpot or a regular pot and putting a hunk of pork in. Then pour a can of your favorite enchilada sauce over the top and put a lid on it! Turn the heat to low and walk away for 3-4 hours. Now when you get back to your meat you will be able to pull it apart without any trouble. Just use some tongs and pinch and pull until it is all shredded. At this point you may want to add some more sauce so that your meat doesn’t dry out and the liquid flavor gets absorbed into every crevice of the pulled pork. Let it simmer uncovered while you chop your onion and cilantro and warm your tortillas.
Now all that’s left is to fill those warm tortillas with your pulled pork goodness. Top with some onion and cilantro squeeze your lime and enjoy! I also made some pickled radish to accompany mine and it added a really fun twist to the taco.
