I love all things Mexican food! If you don’t believe me you can go here and here and here and even here! I also really like pizza so merging the two seemed like a no brainer! I started off with my most favorite pizza dough, the $0.69 box of jiffy. This stuff is amazing! They quit carrying it at our local store so when we were shopping in the “big city” and found it I bought like 10 boxes! You just mix it with half a cup of warm water and then roll it out on a VERY well floured board. I always prebake ours until the top had the tiniest crust to it (maybe 10 minutes) so that once you add sauce and toppings the crust stays nice and crispy and doesn’t get soggy.
I started by mixing up half a can of refried beans with a little bit of enchilada sauce just to make it easier to spread and more sauce like. I topped that with one pound of cooked ground meat (Turkey or beef) seasoned with reek kat taco seasoning. Sprinkle on some cheese and back in the oven it went. Bake your pizza until the cheese is melt and bubbling with goodness.
Once you pull it out of the oven top it with some shredded lettuce and your favorite salsa. I used a homemade pico like salsa because I like my salsa on the chunky side! Cut it up and enjoy!
