So we hosted a football party last night with some of our good friends and I really wanted to make sure to have easy to eat party snacks. This six layer dip was super easy, yummy and a total hit! The best part about it is the fact that most of the layers are homemade! No overly processed ingredients, which means you can eat more with less guilt right. Right? I thought so!
The first layer is the beans. They are the foundation of this dip and it is super easy to whip up yourself! Start with a can of your favorite beans. I use low sodium black beans, but if you are wanting something more traditional you could use pinto beans. Pour them into your food processor and let it go until they reach a smooth consistency. I added about 2 teaspoons of olive oil to my beans to make them a little creamier. If you don’t have a food processor you can use either a masher or a good old fashioned fork! I added some fresh garlic, cumin, paprika and diced Anaheim peppers to mine to up the yum factor, but you can season yours to suit your tastes! That’s it, you’re done!
Now that your beans are done it’s time to move on to the guacamole. Again this is such an easy thing to make and you don’t get any of the weird preservatives like it the store bought kind. Simply scoop out 3 regular sized avocados into a bowl and mash them with a fork until they are a chunky consistency. Then add 1/4 cup diced red onions and 1/4 cup finely chopped cilantro. Mix it up with a little air of line nice and a dash of fresh garlic and you’re done!
The next layer is the sour cream. I wish I could tell you I made my own, but yeah, I don’t. I diy a lot of things, but this isn’t one! However layer four, the salsa is one of my favorite things to make! Start with a can of your favorite diced tomatoes. I like the ones with green chili’s mixed in. Add a tablespoon of fresh garlic, 1/4 cup of chopped onion, 1/2 cup chopped cilantro, 1/2 of an Anaheim pepper and a squirt of lime juice. Mix it all up and try not to eat it all!
Layers five and six are quick and easy. Shredded cheese and sliced olives! Sprinkle them on top and you are ready to go! These are a little tricky to eat out of the cup so once you have yours feel free to dump it out on your plate! They are the perfect vessel to make sure that no one is double dipping in your dip and they are super fun to put out on display!
