Bonus Post Alert! Normally I only share one recipe with you each week, but this one was so good I had to share it right away! When I was growing up (in my tiny small town in the middle of nowhere) we had lunch ladies (I love you Lois!!) who made real lunch. From scratch. Every day. I know that this seems too good to be true but it’s true and man oh man was it good! The most popular dish was always “cheese zombies” and tomato soup. You can ask anyone from my school about cheese zombies and you will get the same wistful smile, and glazed over eyes as they remember that soft doughy goodness loaded with more cheese than should legally be allowed. I’m getting a little hungry just thinking about it!
So in that spirit when Pillsbury asked me to share one of their recipes with you I was immediately drawn to recreating these zombies of goodness. Their recipe for grilled cheese sandwiches calls for rolling the biscuits out thin, cooking them on the griddle and then using those biscuity slices to make a grilled cheese. This also sounds good (I think I must be hungry) however I love the flaky layers that you get especially from the ‘”flaky layers” Pillsbury biscuits. So I modified their recipe and let me tell you it is a winner! The only things you need are a can of your favorite flavor of Grands Biscuits and copious amounts of cheese. I made this recipe after an especially long day of running kids to and from school, volunteering in classrooms and baby swapping with some of my girl friends. On a day like this a recipe that only takes me 10 minutes from start to sticking it in the oven is my kind of dinner!
The first thing you need to do is slice each of your biscuits in half the tricky way. I tried to stand them up and slice down the middle, but ended up with some deformed circles so I decided to slice them horizontally while they were flat on the cutting board. Much better results! Layer half of your biscuits on the bottom of a lightly greased baking dish and “sprinkle” with two cups of shredded cheese. Yes, two cups. No one said this recipe was healthy! Layer your remaining biscuit slices on top. Then you stick it in the 350 oven for about 20 minutes.
Once you pull it out of the oven you will be overwhelmed with the cheesy, buttery, biscuity smells. It was almost intoxicating. Give it just a couple of minutes to rest, this way when you start to cut them out your cheese doesn’t escape too much.
I served ours with a cup of tomato soup, because NOTHING goes better with a cheese zombie than a cup of tomato soup. Except maybe a sweet lunch lady smile! Go check out all of the Pillsbury recipes (I can’t wait to try some more of them) and let me know which one you are most excited to try!
