My husbands second favorite food of all time is a sandwich (his first is nachos), and it can be any kind of sandwich as long as it is loaded with fresh ingredients and delicious flavors. We have been trying to make our football Sunday foods a little healthier and so this recipe was a nice move in that direction. It was also super easy and unbelievably good!
It all starts with a “fancy” baguette from the bakery department at the grocery store. I think that part of what makes this sandwich so much fun is the bread. If I had made this on ordinary sliced bread it would have just been okay. So, you take your bread and divide it into 3-4″ sections so that these can be served as finger food. Then it’s as simple as slicing your veggies and warming your meats! I bought a bag of pre-cooked chicken (from the clearance dept) and tossed it in a pan with 3 slices of my pre-cooked bacon. While that heated up I sliced my veggies. I used lettuce, tomato, onion and avocado. Start by laying a piece of lettuce on the bottom of your sandwich, this will keep your other ingredients from falling out the bottom of your sandwich. Top that with your chicken and a little blue cheese and then you add your tomato, onion and avocado slices. Top that with half a slice of bacon and you are ready to go!
I served ours with some sandwich spreads (mayo and mustard) on the side so that everyone could choose what they wanted on their own sandwich. They were such a hit and will definitely be a repeat in the future.
