I know I have told you how much I love shopping at the Restore for funky old building supplies (here, here, here and here), but they also have a whole section dedicated to home goods and kitchen gadgets. My hubby and I are both total kitchen gadget people and we own a bazillion “makers” to prove it! Our local store recently moved into a new location so we were anxious to go check it out and see what kind of new goodies they would have. One of the things my hubby found was this counter top tiny fryer. We plugged it in at the store to make sure it would get hot and then bought it for a mere $3. Of course we had to try out deep frying a little bit of everything (mushrooms, hot dogs, potatoes, chips…), but I knew this would be the answer to my long troubling taquito problem! I have tried to make taquitos in the oven and a regular pan on the stove with oil, but nothing worked. This my friends was the answer!
To make my taquitos I boiled some chicken and then shredded it in my food processor. I used the plastic kneading blade so that it ended up more a pulled consistency rather than minced. Then I mixed in cream cheese, cilantro and diced up jalepenos. Can you see what I am doing here, I am trying to recreate my favorite bar food of all time…poppers! Then I spooned some of the filling into a corn tortilla and rolled it up. I popped that bad boy into the fry basket and dropped it like it was hot! After just a few minutes (when it turned golden brown) I pulled it out and let it rest on a kitchen rag. Repeat this process for as many taquitos as you can make and then place them on a plate.
I whipped up some of my awesome salsa and guacamole and we had ourselves a Monday night football party snack!
