My hubby has been fighting the same cold for what seems like forever now and so I decided to try and cure him with a batch of this warm and hearty chicken noodle soup! It is so rich and delicious and the perfect thing to have on a grey and rainy day (which it seems is everyday right now). This recipe is super easy and makes enough for leftovers, which in our house is always a good thing! We never seem to have enough leftovers…I guess with feeding five people our meals just don’t go as far!
Hearty Chicken Noodle Soup
- 2 chicken breasts, cooked and cubed
- 1/2 box noodles (I like the veggie noodles- extra nutritious oomph)
- 1/2 bag frozen veggies (carrots, peas, corn, beans)
- 2 cans of cream of mushroom soup (or your favorite cream of ___ soup)
- 3 soup cans of water
- 1 tbsp chopped garlic
- 2 tbsp onion powder
- pepper to taste
You’ll want to start by cooking your chicken first. I always cook my frozen chicken breasts on our knock off foreman grill. I’ve said it before, but I love kitchen gadgets and the grill is one of our most used gadgets! I use it to make delicious sandwiches, grill chicken, make burgers and so much more! While your chicken is cooking, Put all the other ingredients in a big pot on the stove and turn the heat to medium high. Stir occasionally so the noodles don’t get all clumped together. Once the chicken is cooked, chop it up into bite sized pieces and add it to the pot. Continue cooking until your noodles are soft. Once your noodles are cooked through you are done!
