This breakfast is a super simple one that you can whip up even in a hurry. In the time it normally takes me to toast a bagel and spread some cream cheese I cooked up two of these breakfast tostadas for my hubby and I!
Breakfast Tostada
- Tostada Shell
- Refried Beans (I like the no fat ones)
- Eggs
- Salsa
- Shredded Cheese
- Enchilada Sauce
- Cilantro
- Hot sauce
First things first, you’ll need to prep your beans. Start by mixing one can of refried beans with half a can of enchilada sauce. Mix them together until you get a creamy bean sauce mixture then pop them in the microwave for a couple of minutes to get them hot. While your beans are warming up get a pan hot on the stove and cook your eggs. I like mine sunny side up and my hubby likes his flipped over, there is no wrong way to cook your egg, just do what you love! By now your beans are probably hot so grab them and spread that mixture on top of your tostada shell making sure not to press to hard so you don’t break your shell. Then you sprinkle on a little bit of shredded cheese and top that with some fresh salsa. Then you will add your egg and sprinkle on some cilantro.
