With Easter just around the corner I figured it was time to start figuring out what to do with all those hard boiled eggs! I had been craving egg salad sandwiches so I tried a new spin on freshening up an old classic .
Egg Salad Sandwiches
- 3 hard boiled eggs
- 1/4 cup sour cream
- 2 Tbsp yellow mustard
- 2 croissants
- Spinach
- Tomato, sliced
- Bacon, cooked to your liking
- Red Onion, thinly sliced
Start off by hard boiling your eggs. I really wish I could give you a winning step by step on how to do this, but my eggs are always so hit and miss either too cooked or not cooked enough that I don’t want to lead you in the wrong direction. Once your eggs are hard boiled cut them in half the long way, then in half the long way again and then into thirds. This will leave you with good sized chunks of hard boiled egg. I like my egg salad to have a little texture to it, and not end up like egg mush, but if you like it mushier just keep cutting! Then you will mix in 1/4 cup sour cream (I like fat free) and the yellow mustard. Gently fold the eggs, sour cream and mustard together until it is all coated and sprinkle on some of your favorite seasonings. I like to use fresh ground pepper and garlic powder.
To build your sandwich you will need to slice your croissant in half and add a layer of spinach leaves. Top with some thinly sliced red onion, tomato slices and bacon! We eat the fake bacon (Morningstar brand), but feel free to use whatever you like! I wanted to fancy up my sandwiches and so I used an ice cream scoop to add my egg salad and then laid the top of the croissant on top. Yummy!
