This was one of those meals I just threw together and it was fantastic! It started off with this package of sausages in my fridge, I was thinking about making a traditional sausage and pepper sandwich, but that just wasn’t getting my taste buds excited so I looked around my kitchen. That’s when I saw the bag of corn pasta and things started coming together in my head! With only a few ingredients this dish is so packed with flavor and goodness and will leave you feeling satisfied all night!
Sausage & Peppers Easy Corn Pasta
- 1 package uncooked sausages (4-5 links)
- 1 package corn pasta
- 6 mini peppers sliced
- 2 thick slices of onion, diced
- 1/2 cup cream cheese
- 1 can enchilada sauce
- cilantro to garnish
Start by placing your sausage onto a wire rack on a baking sheet in a 400* oven. They will need to bake for about 20 minutes so go ahead and get those going first. You can definitely use precooked sausages in this recipe, just heat them before adding to the sauce! Get your pasta cooking in one pot and in another put your peppers and onion in some olive oil and get them sweating. You’ll want to stir them fairly consistently so that they don’t stick or burn, you just want them to get soft and fragrant. Once your veggies are looking good add in your cream cheese and enchilada sauce. Mix them all together until it forms a sauce-like consistency. Pull your sausages out of the oven and slice them each once lengthwise and then into rounds. Add them to your sauce and drain your pasta. Add your drained pasta into the pot and stir it all together until it is good and coated. Serve on your favorite plates or in a bowl and top with chopped cilantro!
