I am a real believer that what you eat for breakfast sets the tone for your whole day. And while there is nothing wrong with a bowl of cold cereal when it is already cold and gloomy outside eating something cold can really dampen your spirits. Now with that being said I am also a huge fan of not having to change my kids clothes after breakfast because they are covered in syrup or peanut butter. I mean let’s be real, sometimes it can be a fight to get them dressed at all let alone get them dressed twice! So I started experimenting with syrup-less pancake ideas and I have finally hit a winner with these knock off girl scout cookie pancakes!
Samoa Pancake Bites
- 1 1/2 cups dry pancake mix (store bought or home made, whatever makes you happiest)
- 1/2 cup chocolate chips
- 1/4 cup coconut flakes
- 1 Tbsp caramel sauce
- 1/4 flax seeds (because something about this has to be healthy!)
Start by mixing up your pancake mix with water until it reaches your desired consistency. Some people like it runny other like it thick, just do what you normally do! I like mine somewhere in the middle, not so runny that they don’t hold their shape but not so thick that you can’t pour them onto the pan. Once you get your batter how you like it go ahead and mix in all the other ingredients. I like to mix them all in instead of dropping them on top of the cooking pancakes because this way everything sort of settles in the middle of the pancake and you don’t end up with a big melted chocolate mess. That would defeat the whole purpose of making syrup-less pancakes to begin with!
Once your batter is all mixed up scoop and pour 1/8 cup ish pancakes onto your hot pan. Let them cook up until the top starts to bubble and they are brown and firm enough to flip without running everywhere. Cook until the other side is golden brown and then serve warm (not hot, because kids complain about food that is too hot). If you wanted to fancy these up for a special brunch event or maybe a nice breakfast in bed for a special lady in your life you could drizzle the top with some of the salted caramel sauce I made in this recipe…YUM!
