As a stay at home mom I spend a whole lot of time with my kiddos while my husband is off at work. This means that for the bulk of the day I am the rule maker, the rule enforcer and for the most part the “bad cop”. When papa comes through the door it is all hugs and kisses and smiles and I love you’s, which is fine (better than fine really), but sometimes I feel a little like I am getting the shaft on all the good stuff. I decided that no one but me could change this so I whipped up a little something to help make me the “good cop” mom.
So after the kids were in bed, because let’s be real if they’re awake I can’t do anything, let alone create a fun surprise for them, I whipped up some fruity smoothies using my favorite Silk milk (don’t forget you can get a coupon by signing up here). Then I poured those bad boys into popsicle molds that I keep just for special occasions like this and slipped them in the freezer. The next morning the kids came down for another boring breakfast of peanut butter toast. As they all scooted up to the table I whipped out my secret weapon – popsicles for breakfast! WHAM, BAM, THANK YOU MA’AM! Once again I am the coolest mom on the block! Thanks to my good friend Kerry for suggesting this awesome idea, she really is a cool mom!
Smoothie Popsicles
- 1 cup Silk almond/coconut milk
- 2 cups frozen fruit (I used a mixed bag)
- 1/4 cup Chia seeds (because they’re good for you)
Put everything in the blender and let it go until it is a smooth and creamy consistency. Don’t worry if all your fruit doesn’t completely break down, it just adds to the awesome popsicle surprise later. Pour it into your favorite popsicle mold and freeze.
