There is nothing slow about our summer schedule! We are constantly heading to the park, trekking to the mountains and meeting up with friends. One of my kids’ favorite things to do is meet up with friends at the park for lunch. The school districts here provides free lunch to all kids under 18 (score!) at our local parks, however it is against the rules for them to share any of that food with us hungry grown ups. Normally I kick myself and watch as my kids eat or I drive guiltily through the drive through and pick something up, but neither of those options really leave me feeling good. I realized that I needed a quick and easy on the go snack that would leave me full and satisfied and keep me out of the drive through. Let me tell you, these protein packed on the go snack cups do just that!
I was picking up some groceries the other day at Walmart and saw these double chocolate nutrition bars hanging out right above the cereal bars I normally buy for my kids. Normally these kinds of bars are a nightmare for me because I will throw one in my bag for a snack only to find it all smushed up and broken hours later. Then I realized I could use that smushed and broken bar for something even more delicious! I grabbed a box of the double chocolate bars and picked up some vanilla yogurt and farm fresh strawberries. I had a plan for some #barnutrition!
I do a lot of my meal prep for the week on Sunday nights so this last Sunday I grabbed some of my empty glass jars and filled a few of them with 3/4 cup vanilla yogurt and 3/4 cup fresh sliced strawberries. I stuck them in the fridge with a plastic spoon taped right to the side of the jar. Talk about prepared! Then Monday morning as we were heading out to the park I grabbed a jar from the fridge and a bar from the box and tossed them both into my purse. It seriously took me about 30 seconds! Once we got to the park we met up with a bunch of our friends and the kids were off running! The mom’s and I grabbed a picnic table and watched the kids play. Once it was time for lunch I got my kids all set up with their awesome school lunches and then grabbed my jar and bar out of my purse. Just like I imagined the bar was smushed and broken, but I was sad about it this time! I unwrapped the bar and opened the jar and mixed them all together. This is when my friend asked me what the heck I had as she eyed my jar hungrily. I told her my brilliant plan and then I offered it to her. She was gracious enough to let me take a picture of her eating it to share with you (I have the best friends!). I also snapped some pics of our adorable kids eating their lunches.
