Ever since I started working I’ve been battling making delicious dinners on week nights. I’ve tried freezer meals, frozen meals and even resorted to ordering pizza a time or two or three, but I’m tired of feeling like a failure in the kitchen when in the past I found so much joy in cooking. I am working on changing this (slowly, very slowly), which is why I decided that this easy dinner blog hop was exactly the thing I needed to get going on this change.
I am an avid Safeway shopper. There aren’t a lot of choices for groceries where we live (like 2) and so Safeway has been my go to for the past few years. Last year they came out with a line of Mexican inspired marinated meats and let me tell you now, they are the best. Like better than I can do at home. With an entire day to prepare. They are that good. So of course I have to tell you about them, because if you are like me and you are struggling with how to do it all, you can relax and at least know that starting with some pre-marinated meats will make it easier.
I like to cook these on our counter top grill. It gives you the perfect charred outside, while leaving the meat tender and juicy on the inside. Plus it takes all the guess work out of how long to cook it for, because there is a hand guide right on the front. Genius! For this meal, while the grill was preheating I whipped up a batch of bagged coleslaw. I love coleslaw. Like a lot. I am slowing turning my children into coleslaw lovers too. They think it’s the best stuff on earth. All of them. Even the picky one. Once your coleslaw is all mixed up, set it aside so the dressing can penetrate all those cabbage shreds and get it good and saucy. Then put your meat on the grill. Turn the dial to the appropriate time and let it go.
Once the timer dings, pull your meat off and let it rest on a cutting board. Stick a couple of your favorite buns/rolls/bread into the toaster and give it a little toasting. Not a whole lot, because you want to bread to be able to help soak up all those awesome slaw juices and meat drippings. It basically is just there to keep your hands from becoming a HUGE mess. 🙂
Once your buns are toasted begin slicing your meat on a diagonal, the thinner the better. Then you build. Start by layering your meat slices on the bottom bun, then using a scoop, a spoon or even your hands add some of that coleslaw. Top with the other half of your toasted bun and enjoy! This dinner takes less than 30 minutes start to finish, and it is packed with enough flavor to keep you satisfied long after you finish the last bite.
