I’ve talked before about how I’ve been struggling to create delicious home cooked meals at the end of a long day, and I’m a little embarassed to say that the trick I’m about to share with you today isn’t my own. My sweet hubby is actually the one who taught me how to perfect a juicy meatball. See my problem was that I would try to take my frozen meatball and stick it directly in a skillet and try to cook the frozen out of it. This resulted in dry (sometimes still frozen) meatballs that no one really wanted to eat. So then I tried microwaving them first. But we all know what happens to stuff in the microwave. It gets soggy. Baking them was the only way I’d found to get a nice meatball, until this. See I didn’t want to have to heat up the oven, and then bake them off. Pasta only takes 15 minutes start to finish, and if you have kids you know that the hour before dinner is often one of the longest! You don’t want anything standing between you and a finished meal. Boil them.
Yep, that’s right. I said boil them. It keeps the meatballs so tender and juicy. Just dump them in the pot with your pasta and boil away. I like to pull mine out before I dump the pasta so that I can quickly throw them in some hot oil and get a nice crunchy outside, but my hubby just drains them with the pasta and tosses them with the sauce. It really doesn’t get easier than that! All told this whole dinner takes about 15 minutes and it is one that my kids will all eat clean off their plate. No leftovers!
