Hi My Craftily Ever After readers! I am so excited to be contributing recipes for Ashley! I love to cook and bake, however, it wasn’t always that way. I used to make a lot of hamburger helper type meals for my little family until I was pregnant with baby #2 in 2010. I became a stay at home mom half way through my pregnancy and I started trying some of the recipes that had been collecting dust for years. I can’t say that all of the meals I make look pretty, or even turn out, but I keep trying. And thanks to Pinterest my eyes have been opened to many new meals and clever ways of doing things.
With the start of the new year not far behind us, many of us are looking for meals that are a little lighter, and a little healthier. Now, don’t get me wrong, I’m not saying this is a “healthy” meal, but you could do worse, right? After all, there is baby spinach on this so that voids everything else, doesn’t it??
You want to make a wrap? Ok, here is what I mixed together.
- 1 C. cooked chicken – I actually just used a can of chicken
- 1 Tbsp. pickle relish
- 1/2 tsp. mustard
- 1/4 C. mayonnaise
- 1 hard boiled egg, diced
- Baby spinach
- salt and pepper to taste
- tortillas
- First, mix together your first 5 ingredients from above. Then salt and pepper
- Next, I took my tortilla and put on a layer of baby spinach. Don’t be afraid to really pile it on!
- Then I spooned on my chicken salad mixture. And rolled it up. You are ready to eat!
I made two of these. One for me and one that I split between my two littles, with a little left over in the bowl that I snacked on later!
Mixing it up and eating a “sandwich” in a wrap form, like a tortilla, is always a fun way to mix up a meal.
