I’ve been looking to up my baking game lately, and with the onset of NCAA® March Madness it’s been the perfect time to have some people over and share some yummy treats with them. I walking through Walmart the other day and saw this smoking deal on Coca Cola NCAA® Final Four Packs available at Walmart. We don’t usually buy a lot of soda because it takes us a while to get through a whole 12 pack of one flavor, but there were a few different flavors of 4 packs so I could mix and match however I liked. The deal was 4 packs (16 cans) for $5 or 2 packs for $3. I grabbed two of the cherry Cokes, one vanilla and one Coke Zero. Then I remembered back in my “dieting” days a recipe I had heard for making a cake using Coke. So I grabbed a few boxes of chocolate cake mix and some frosting as well. I am a huge propenent of choices, when it comes to food, parenting, and life in general, I hate feeling powerless. I like to host my get togethers in the same way, and it usually means I have lots of versions of the same thing so that everyone finds something they like. This recipe is so easy, that I could have made 12 different versions and it wouldn’t have added hardly any time to my party prep! You simple need 1 box of cake mix and 1 can of your favorite soda. I chose to do all three of my recipes with a chocolate cake mix, but I changed up the flavor of Coke with each one. The first one I made was a chocolate Cherry Coke cupcake.
Simply mix your favorite box of chocolate cake mix with one can of Cherry Coke. Stir it well, and then fill cupcake liners about 2/3 full. Bake until a toothpick comes out clean and let them cool. For the Cherry Coke cupcakes I topped them with cherry frosting and either a maraschino cherry or a chocolate covered dried cherry. Add a few chocolate sprinkles and you are good to go!
Now while the cherry cupcakes were baking a started the next batch of cupcakes. For this batch I used the same chocolate cake mix and a can of Coke Zero. I baked them off exactly the same way as the others and when they were cool I topped them with a rich milk chocolate frosting and more chocolate sprinkles! These ones were AMAZING!!
My final batch were the Vanilla Coke cupcakes. Again I used the same chocolate cake mix and added a can of Vanilla Coke. I baked them off just like the others and when they were cool I frosted with a creamy vanilla frosting and topped them with a variety of colored sprinkles. These ones were my personal favorite, but that might be because I love the combination of a rich chocolate cake and a creamy vanilla frosting.
This recipe is so easy that I am pretty sure even my son could have baked these off for me without a hitch! There were a real hit with everyone, who doesn’t love the novelty of eating their soda?
