I joke a lot about being Mexican on the inside. I love all the food, the language, the culture, and the weather that Mexico offers, and so I tend to prepare a lot of Mexican dishes. One of my favorites is taquitos, however there are some nights when I just don’t have the time or the energy to whip them up from scratch. I headed out of town last week for SNAP conference and I knew that my hubby was going to be home alone with the kids cooking all those meals so I picked up a big box of frozen Delimex taquitos (or three) from Walmart to help ease the struggle. Luckily there were some leftover when I got home so I whipped up a batch of this super easy avocado crema dip and served them for dinner again this week. Hey, they are delicious and one thing that my kids NEVER complain about!
Avocado Crema Recipe
- 3 ripe avocados
- 1 jalapeno (less if you like less heat)
- 1/2 cup sour cream
- 1/4 cup cilantro
- 1 Tbsp minced garlic
- salt to taste
Add all of your ingredients to your food processor (or blender) and mix until you get a creamy sauce. Add salt to taste. Then serve alongside your favorite Mexican foods!
This creamy avocado dip is accented by a subtle heat from the jalapeno and a fresh garden flavor from the cilantro. It is an amazing contrast to the crunchy, rich flavors of the taquitos and rolled tacos. My kids kept trying to decide which flavor was their favorite, beef or chicken and they couldn’t. Although there is a serious divide in my house over which is better: corn or flour tortillas. My husband and middle daughter insist that the flour ones are the best. Our youngest daughter and I both think that corn tortillas are the bee’s knees. And our son, well he wavers back and forth depending on which one is in his mouth at that moment! No matter which one I buy, it is a guarantee that they will all get eaten!
