It’s been a while since I shared a recipe for these amazing snack balls and now that it is summer I thought it only appropriate to create a special s’mores version. I love these balls because they are super quick and easy to make and they are ALWAYS a huge hit. These are a great addition to any barbecue potluck you are attending, a family camping trip or even just a fun and tasty treat for these warm summer nights. These only have three ingredients (just like a real s’more) and they come together in a just a couple of minutes.
Start off by pulverizing a sleeve of your favorite graham crackers in your food processor or blender. You can also use the old-fashioned method of putting them in a baggie and squashing them by hand. Whatever floats your boat, no judgement here. Once they are all crumbled up into itty bitty pieces add in about 1/2 a cup of mini chocolate chips. If you really like chocolate, add a bit more. Chocolate not your thing, add less. Then it gets sticky. You want to add about half a jar of marshmallow fluff. That’s about a cup for you measurement needy folks. 🙂
Now before you do anything else, spray your hands with some non-stick spray. Then get in there and get sticky. You are going to need to combine these three ingredients in a large mixing bowl. You are going to mix and mix and mix until your whole bowl is full of tiny pebbles of goodness. Then grab a small fistful and start forming it into a ball. Once you have a fairly solid ball you can roll it around in your hands to smooth it out and shape it. Then repeat until you are all out of mix. I don’t recommend storing these balls in the fridge, and I’d avoid direct sunlight if I were you as well. I wouldn’t worry too much about storing them at all actually, since I’m pretty sure they’ll be gone before it becomes an issue…
S’mores Summer Snack Bites
- 1 sleeve graham crackers
- 1/2 cup mini chocolate chips
- 1 cup marshmallow fluff
Puree the graham crackers and mix in the chocolate chips and marshmallow fluff. You will need to spray your hands with non-stick spray first! Once thoroughly mixed combine into balls and serve!
