Ever since I went back to work last year our mornings have been crazier than ever. Normally I toss the kids a granola bar as we walk out the door to daycare, school and work. This means that weekend breakfasts have become almost a mini celebration for surviving another crazy week. Usually my husband gets up and makes coffee for us and breakfast for the kids and then I follow behind and make breakfast for us. Sometimes though, I get up first. And on those days I like to make something that I know everyone is going to like.
I was doing some mid-week grocery shopping at Walmart and decided to make this last weekend one of those rare mom makes breakfast weekends. I grabbed some thick cut bacon (because who doesn’t like bacon), scone mix, fresh fruit and these NEW Quaker® Real Medleys® Yogurt Cups from the cereal aisle. Yep, I said it, shelf stable yogurt. My littlest daughter is a total yogurt fiend, seriously a cup of yogurt is her happy place. So I knew she would love the combination of yogurt and multigrain granola with real fruit and crunchy nuts. Plus, you just add cold milk and it’s ready to go. Easy. Peasy.
I also wanted to try my hand at a little baking. My mom owned a cafe when I was growing up and one of the things I can remember her making daily were scones. Sweet scones, savory scones, iced scones…amazing. I don’t bake (it’s just not my thing) however, I found a box of scone mix at the store and figured it was worth a shot. I mixed up the dough just like the directions said and then I went rogue. I added two tablespoons of maple syrup and a cup of chopped bacon bits. OMG, amazing. I baked them like the package suggested for twelve minutes and got my fruits washed and cut up. Then, while they were still hot, I drizzled them with even more maple syrup.
Then I set everything out on the table and let my family dish up. My son had thirds on the scones. Even my hubby (who hates sweets) said they were amazing. He even snuck a piece of real bacon, which is a total treat in my house! Just like I thought, my littlest loved the Real Medleys Yogurt Cups. She said they were Crunchy. Cool. Yum. Just like their tagline suggests. She even got a kick out of adding her cold milk and mixing it up herself. She kept saying she made breakfast. She is really growing up way toooooo fast.
Maple Bacon Scones
- 1 Box of scone mix, any brand
- 1 cup chopped bacon pieces
- 2 tablespoons maple syrup
Follow the directions on your box of scone mix and prepare dough. Then add your maple syrup and bacon pieces. Mix them in thoroughly, roll, cut and bake. While they are still hot from the oven drizzle some more maple syrup (to your liking) on top of them. Serve warm!
