Hi my name is Ashley and I’m a salsa-holic. (This is the part where you say – Hi Ashley.) I’m here to confess that I love salsa a lot, like I put it on most meals a lot. Eggs, salad, bagels, nothing is safe from salsa in my house. So of course I always stock up when I’m grocery shopping. I mean what’s the point in having a walk in pantry if I don’t fill it with my favorite foods? Last time I was at Safeway I saw that they were doing their annual stock up sale, so I went ahead and stocked up on salsa. I don’t believe there is such a thing as too much salsa. Anyway…back to the point of this blog post.
One of my favorite weeknight dinners is quiche (key-sh). It’s ridiculously easy and amazingly delicious. It’s also the meal that gets so easily overlooked because it isn’t fancy and it doesn’t come up in conversation often. In fact I brought some for lunch one day and when I told my students I had quiche they all just looked at me and asked what the heck that was! WHAT!!? So I am here bringing back the quiche (and topping it with salsa, obviously).
I’ve made quiche a bunch of different ways, but these days I am a fan of making a BIG batch. So I like to start off with a dough sheet in the bottom of a 9×12 casserole dish. The recipe I’m sharing today is just one of about a million different combinations you could make, so if you don’t like this one just edit it to fit your liking!
How to Make Quiche
I browned up a pound of ground sausage and added that directly on top of my dough. Then I added finely diced onions, chopped spinach and shredded cheese. Now for the eggs. For this size of a quiche you really need a dozen eggs. So get a big bowl and start cracking! Once you have all your eggs in a bowl add your seasonings. I like to add my seasonings directly to the egg mixture because eggs are liquid so they get into every nook and cranny, which means my flavors do too. Beat your eggs like they stole something from you. No seriously the more you beat and whip them the fluffier and lighter they get. Promise. Then pour them in on top of everything else and pop that bad boy into the oven.
This part is the tricky part. You wait while it bakes. You will know it is done when it doesn’t jiggle anymore. No toothpick required. No jiggle = done. Simple as pie. Like a breakfast pie…
Wait for it to cool (about 5 minutes) and then cut it into squares. Serve as part of a breakfast brunch, a breakfast for dinner, take it as a potluck dish, heck just make it to take for lunches. No matter when you eat it, it’s gonna be good!
