My youngest daughter turned 4 last month, and we celebrated like princesses with crafts and games galore. I wanted to do something special for her birthday and get away from the traditional cake. One of her best friends is lactose intolerant and we go back and forth on the vegan train so I decided to take this opportunity to make some sweet frozen treats that would leave everyone feeling good! I was at Walmart picking up some last minute birthday supplies (I’m sure you all know how that goes) and grabbed a couple ingredients to get these frozen treats going.
I started off with my regular cookie recipe, substituting a vegan butter for regular and some non-dairy chocolate morsels. I baked them off like usual and once they were cool I popped them into the freezer on a cooling rack to get nice and firm.
Basic Cookie Dough Recipe
- 1 cup softened butter or butter alternate (2 sticks)
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp vanilla
- 2 eggs
- 2 1/2 cups flour
- 1 1/2 cups chocolate morsels
Start by putting your softened butter and sugars into a bowl and mixing them up until they are completely combined. Add your baking soda, salt, vanilla and eggs and mix them together. Slowly add your flour mixing it in as you go. Once you have this base the sky’s the limit as far as what you can do. You can add chocolate morsels like I did, or any number of other fun mix-ins!
This recipe made 24 jumbo cookies for me (12 per sheet 2 sheets) but it will all depend on how big or small you make your cookies!
While the cookies were chillin’ in the freezer I pulled out a few pints of So Delicious Dairy Free®. I went with the Almond Milk Mocha Almond Fudge, Coconut Vanilla Bean and the Cashew Dark Chocolate Truffle. This is one of my favorite brands for non dairy sweet treats because they are Non-GMO project certified and contain no artificial colors, flavors or preservatives. They are one of the few frozen treats I give my kids without a side of guilt. Not to mention the fact that there is NO high-fructose corn syrup! Talk about a win for parents, plus it doesn’t hurt my waistline to skip out on all that fake stuff too!
I grabbed a serrated bread knife and sliced those bad boys into five slices each. I went just shy of an inch with each slice, being very careful not to cut a finger off in the process!
Once they were all sliced up, I grabbed those cookies from the freezer and started sandwiching them together. I simply laid the slice, cardboard and all, onto a cookie bottom and gently slid the cardboard off. Then I topped that with another cookie and gently pressed them together. I wrapped each sandwich in wax paper and popped them back into the freezer until party day.
While the kids were eating lunch, I pulled the cookies out, unwrapped them and put them on a serving tray. I stuck a candle into one and we sang a happy birthday song to my littlest. The kids devoured the sandwiches, and my daughters friends mom was overjoyed to learn they were dairy free!
The best part was the leftovers, we had frozen sweet sandwiches leftover for days and so I got to try them all! My favorite was by far the Almond Milk Mocha Almond Fudge. It was so amazingly rich and creamy, and if I hadn’t known it was a plant based frozen treat I never would have guessed!!! Have you ever made frozen treats like this? What are your favorite tricks?
