Tis the season for simple ways to share the spirit with all the people in your life who help you out. For me, those people are all of my kids’ teachers. Since both my husband and I work full time, our kids spend a lot of their day in the care of other adults. They’re regular teachers during the bulk of the day, but also the amazing folks at their before and after care. With so many people in my life who do so much for both me and my kids, I really wanted to find a way to let them know I appreciate all their hard work. I was standing in the checkout line at Safeway the other night after work, picking up some coffee creamer for the morning (can’t live without it), when I spotted these special Glade® Limited Edition Winter Collection candles. Of course I had to go over and smell them all, and when I got to the Share the Spirit™ Pomegranate Sparkle™ scent, I breathed a sigh of relief. It was the perfect balance of bright notes with a hint of tropical fruitiness, so of course I bought a few!
I don’t know anyone who doesn’t love a good smelling candle, which makes them almost the perfect gift. I had been wanting to try a Pomegranate Biscotti recipe for a while anyway and this was the perfect excuse!
Pomegranate Biscotti
- 1 cup sugar
- 1/2 cup butter
- 2 eggs
- 3/4 TBSP vanilla
- 2 cups flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup almond
- 1 cup dried fruit
Start by creaming the butter and sugar until fluffy, and then crack in eggs one at a time. Mix until they are fully incorporated. Add the extract, baking powder, salt, almonds and dried fruit. Mix until the batter is fully combined.
For larger biscotti form your dough into a single log, if you are making mini biscotti (like I did) divide the batter into two logs (about 1 inch tall and 2 inches wide).
Bake at 350 degrees for 30 minutes. Let them cool for ten minutes and then slice them into whatever thickness you want your final pieces to be.
Bake again at 300 degrees for 12 minutes. Let them cool for 15 minutes and then you can either leave them plain or dip them into your favorite chocolate, I used white chocolate!
Since these were going in a gift basket for a few of my kids teachers I wrapped up the biscotti in a treat bag, and popped them into a gift basket with this AMAZING smelling Glade® Jar Candle in Share the Spirit™ Pomegranate Sparkle™ scent.
