Last week I caught you all up on my exciting adventures in Palm Springs for my spring break. I mentioned that we ate some amazing food, including the best bbq I’ve ever had. One of the dishes we ordered was banana pudding, and I was a little reluctant to try because, I don’t like bananas, and I don’t like pudding. My husband seemed to think it would all be okay though, so I gave it a go.
So yeah, it was pretty amazing. One of my weird food things (we all have weird food things right!?!?) is that I don’t like foods that don’t have to be chewed. Yogurt, not without granola. Pudding, not unless it’s in pie form. Once it arrived I saw that it was not just a creamy banana pudding, but that it had chunks of bananas and vanilla wafer cookies in it too!! Perhaps you already knew this, but I was so pleasantly surprised!
I decided that since I was a new convert to banana pudding, I should probably try my hand at it at home. Just to make sure it wasn’t a fluke and so I could honestly go forward in my life telling people I like banana pudding. It doesn’t come up in conversation very often, but if it does I want to be prepared.
Banana Pudding
- Banana pudding mix
- 2 cups cold milk
- 2 cups+ mini vanilla wafer cookies
- 1 banana sliced into pieces
- serving cups
Start off by gathering all you ingredients. I wasn’t sure how this was all going to end up, so I opted to make portion controlled servings. So that if I loved it I wouldn’t eat a whole pan of it, and if I hated it I wouldn’t feel bad throwing it out feeding it to my kids for an after dinner treat.
I started by mixing up the packet of banana pudding in a large bowl and adding the banana pieces into it. Then I had my littlest daughter smash the cookies into pieces and put them in the bottom of my cups. Once she was done putting the cookie crumbles into the cups I had her scoop the pudding/banana mixture on top. I popped a couple of those uncrushed mini cookies into the top and stuck them into the fridge for a couple of hours and went to paint my nails and watch netflix while I waited. Living the dream right. 🙂
After my nails were dry, dinner was eaten and we were all ready for a treat we dug in. Let’s just say, I can officially say that I like banana pudding. As long as it requires chewing.
