I’ve shared my favorite chili recipe here before, and I’ve probably shared my cornbread recipe before, but I’m here to share with you one of my favorite “fancy” meals. Well maybe fancy is the wrong word, more like easy, in a classy put together way. This one is a crowd pleaser in my family because every single person in my family loves cornbread. However, depending on the day only 3-4 of us like chili. So as a way to get my kids to go along with the family dinner model and try some new things I decided to give this a whirl. It worked great! So stay tuned for the worlds easiest dinner fix.
Start off by making a batch of chili. Or don’t. Buy a can. Seriously, no judgement here. Half the time I’m too tired from working to make my own chili too. Life is hard people. Then fill a mug (the fancier your mug, the fancier your meal) about half way full of chili.
Now whip up some cornbread batter. 99% of the time I use the Jiffy cornbread. It costs 50 cents and it tastes great. I usually mix in a can of sweet corn to the batter to give it that “homemade” feel, but whatevs. Do what you will. Top your chili mugs to about 3/4 full and sprinkle on some shredded cheese. Not enough to cover the whole top of the mug, but let’s not be stingy either. Then pop them in the oven and bake them. You’ll know they are done when the top of the cornbread is brown and the cheese is just past gooey, but not quite crisp. It’s not an exact thing. Oven vary. Just check on it.
Then serve those steaming mugs of chili and cornbread up to your family (after they’ve cooled, no one wants burnt fingers) and watch them enjoy. Well really, you’ll probably be too busy enjoying it yourself to watch them, so just picture it in your head. Mmmmmm
