I am not sure I know anyone who doesn’t like pizza. But sometimes pizza can seem like the lazy persons dinner choice, so I am upping my lazy mom’s dinner game with this incredible pizza casserole.
One of the things that has saved my family during the busy school year is my weird love of bulk cooking. I like to spend a couple of hours on either Saturday or Sunday making enough dinners to last us the week. My family was getting kind of sick of the same old things every couple of weeks so I decided to branch out and try a few new recipes. This one was ridiculously easy and my family LOVED it. The best part is that it is super easy to change the ingredients and end up with a completely different meal.
Pizza Casserole
- 1 can pizza dough, cut into bite sized pieces
- 1/2 can cubed pineapple, drained and chopped
- 1 cup diced ham
- 1 1/2 cups shredded mozzarella cheese
- 1 Tbsp italian seasonings
- 1 Tbsp olive oil
Mix all of the ingredients into a large bowl. Stir them up really, really good so that everything is thoroughly coated and covered in goodness. Dump the bowl into a baking dish coated in non-stick spray and either pop it in the freezer or the oven depending on when you are going to eat it.
If you choose to freeze it, awesome, just stick it in the oven when you are ready to eat it like you would a frozen pizza. I bake everything at about 400* until it is bubbly and golden brown on the top.
