Oh my goodness, back to school has me running 100 different directions all of them at full speed! Because it is such a shift going from summer vacation to school mode we spent a couple of weeks practicing. I know that sounds weird, but it really helps my kids work out the kinks (and those grumpy morning attitudes) before it’s go time. Plus, I am able to keep my calm a little better during those trial times, when it isn’t as high stakes for me.
After the first couple of days I realized that my kids did not have enough time to wake up, get dressed AND eat breakfast before we had to get going, so I decided that rather than waking them up even earlier I would make some breakfast foods they could take on the go!
These breakfast sandwiches are so stinkin’ easy to make, and they reheat in the microwave in just 1 minute! Seriously, anything that is both homemade and only takes 1 minute to heat is a no brainer in my book! I made a full dozen of these and they lasted us a couple of weeks!
Ingredients
- eggs
- English muffins
- cheese
- ham, bacon or sausage
Start by spraying a muffin tin with non-stick spray and then crack one egg into each hole. I like to sprinkle a little pepper and garlic powder onto my eggs at this point, but you can totally skip that if your family isn’t into it! Sprinkle on some shredded cheese and pop those babies into the oven! I heated my oven to 350 and baked them for about 7 minutes. Once they stopped being jiggly I took them out. I didn’t want to hard boil them, but I didn’t want that yolk exploding all over either. Use your judgement, a toothpick or the jiggle test to determine when yours are done.
Once the eggs were out of the oven I popped the English muffins in for a few minutes just to give them a little texture. Uncooked muffins, that you later microwave can get a little gooey and gummy and that is not what I am looking for in a breakfast sandwich!
After the muffins were out I laid a couple thin slices of ham on one side of the muffin, topped it with an egg, and then put the other side of the muffin on top. I wrapped them first in parchment paper and then in foil and then stuck them right back in the English muffin bag!
When you are ready to eat them, remove the foil and stick the muffin wrapped in paper into the microwave for about 1 minute. I keep the big bag of sandwiches in the freezer and just pull a couple out the night before and stick them in the fridge.
