Fall is definitely my favorite time of year and with fall comes more family time, snuggling on the couch watching football and having game nights. I don’t know about your family, but mine loves to bond over good food! This recipe was one that had been percolating in the back of my mind for a while and I finally got around to trying it out!
We are notorious corn chip eaters at my house, in fact my friends will make fun of my absolute love of corn chips. Last year I did a 30 day health challenge with a group of my friends and for one whole week I had to give up something and I chose corn chips. Let me tell you, it was the worst week ever! However, this dip tastes amazing with club crackers, thin wheat crackers, woven wheat crackers or potato chips, so I am able to cut back on the corn chips.
While my husband and I were on vacation this summer we picked up a jar of french onion dip and were both really disappointed in the flavor and texture so after stewing over this for a couple of months I finally figured out just the right combination of ingredients to get a rich flavor and creamy texture!
Ingredients
- 1 cup cream cheese
- 1 cup sour cream
- 1 onion, caramelized
- 1 pack powered onion soup mix
Directions
Start by slicing your onion into 1/4″ slices and then caramelizing them. I like to do this on a medium to medium low heat stirring occasionally until all the moisture is gone and the onions are a rich golden brown color. After they are cooled add them and the rest of the ingredients in your food processor. If you don’t have a food processor you can use a blender, just be careful how long you blend it. You want some of the onion texture to be there when you are done. Now, if you try it now, you’ll probably be underwhelmed. You absolutely have to chill your dip for at least 1 hour before serving in order to get that thick and creamy texture!
