I never really understood exactly how easy donuts were to make, but after giving it a go I can safely say that if I can make these anyone can!
I absolutely love cookies and cream ice cream, and these donuts are a warm and delicious way to get those same flavors during these colder months. They make a great fancy brunch addition or a special birthday treat for those people in your life worth baking for! If you know me at all, you know that I don’t bake for just anyone so if you get a batch of these, I must reallllllly love you! The hardest part about this recipe is letting the batter rest for an entire hour, it goes by sooo slowly, especially when you know what is waiting for you on the other side.
Ingredients
- 2 Cups flour
- ½ Cup milk
- ⅔ Cup sugar
- 2 Tsps dry yeast
- 1 Tsp salt
- 2 Eggs
- ¼ Cup butter
- ¼ Cup marshmallow fluff
- ¼ Cup heavy cream
- 1 Tsp vanilla extract
For the Glaze
- ½ Cup heavy cream
- 1 ½ Cup sugar
- 1 Tsp vanilla extract
- ½ Cup crushed chocolate cookies
Directions
Start by preheating your oven to 350F and greasing a donut pan with non-stick spray. Then combine the flour, milk, sugar, butter, dry yeast, salt, eggs, marshmallows fluff, heavy cream, and vanilla with your mixer. Stir until the batter thickens, then set it aside to let it rest for 1 hour.
While that’s resting we’re going to make the glaze. In a small bowl whisk the heavy cream, sugar, and vanilla extract, and fill a piping bag (or baggie!) with the mix.
Fill the donut pan with the batter, and bake for about 13 – 15 minutes or until they rise and turn golden. You’ll coat with the glaze and top with the chocolate cookies.
All that’s left after that is to serve and enjoy them!
Tips
For chocolate lovers, incorporate ½ Cup of melted chocolate into the donut batter.
