This time of year is all about comfort foods and this one pan creamy chicken and spinach dish is definitely comforting. Plus, it can be made using only one pan, and that makes it even better!
My husband is a HUGE fan of casseroles and one pot meals and this creamy spinach chicken is absolutely one of his favorites! In fact, I can mark the change of the seasons less by the weather outside, and more with the changing meal requests inside. We go from lots of fresh salads and bbq to warm and cozy crock pot meals and one pan dishes. This dish combines the creaminess of the buttermilk with a zip of Worcestershire and the tang of parmesan.
Ingredients
- 2 Pounds chicken breasts
- ½ Onion, minced
- 1 Cup spinach leaves
- 2 Cups buttermilk
- 1 Cup parmesan cheese
- 2 Tsps Worcestershire sauce
- ½ Tbsp buffalo sauce
- 1 Tbsp olive oil
- 2 Garlic cloves, minced
- Salt and pepper to taste
Directions
Rub the chicken with olive oil, garlic, salt, and pepper. Place in a cooking bag and refrigerate for at least one hour.
In a pan over medium heat cook the chicken, 5 minutes each side.
Incorporate the spinach, onion, Worcestershire sauce, buffalo sauce, salt, and pepper. Cook until the spinach wilts.
Set the heat to medium-high, pour the buttermilk and add the parmesan cheese. Cook until the cheese has melted.
Serve and enjoy. For an additional layer of flavor, incorporate crispy bacon.
